The 5th annual professional Jamon Carving Course was held at JW Marriott Dongdaemun Hotel in October 22. The event was hosted by Iberko, one of our ESCCK members. The event was also sponsored by Embassy of Spain Economic & Commercial Office of Spain Seoul, ESCCK and Cinco Jotas, which makes one of the best quality Jamon in Spain. Around 50 participants attended at the event including restaurant owners, chefs, students in cooking field and etc. Maestro Valentino Ramos was the instructor of the course.
At the beginning of the course, the co-founder of Iberko, Mr. Isaac Cabanas, made a speech to celebrate the event as well as our Secretary General RogerRoyo. Mr. Valentino Ramos made a presentation of general information of Jamon, how the iberico pork is managed and its distinctions from ordinary Jamon. After the presentation, he began to teach how to carve Jamon and what to be careful when carving. Then, the participants could try to cut Jamon on their own under Mr. Valentino Ramos´ supervision. He instructed how to make a good quality Jamon in details. Finally, when the participants acquired basic skills needed to carve, each participant was awarded with a course certificate.
The event was successfully placed and every participant was very pleased to learn about Jamon and how to carve under the skillful instructor Mr. Valentino Ramos. ESCCK is very pleased to be part of the event and looking forward to the next ‘6th annual professional Jamon Carving Course’.
